Anything that improves my baking …

I will fully admit baking is not a personal strength.

There may be a story about the time we found muffins I’d made in a muffin pan (the pan with the fancy snap-on and carry lid) months later – that is how scrumptious they were.

My baking is clearly forgettable, so I will buy anything that helps!

I had some bananas that were overripe, so I used an easy and fast recipe and the baking cups.

Recipe:

Ingredients:

– 3 large, ripe bananas, mashed

– 3/4 cup sugar

– 1 egg

– 1/3 cup melted butter

– 1 teaspoon baking powder

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1 1/2 cups flour

Directions:

  1. Mash bananas.
  2. Add sugar and slightly beaten egg.
  3. Add melted butter.
  4. Add the dry ingredients and bake at 375 degrees for 20 minutes.

Perfection! Best banana muffins I have ever made!
