Today’s soup was delicious!

I used everything we had left in the fridge!

  • Beef broth
  • Cucumber
  • Red potatoes
  • Green pepper
  • Red pepper
  • Corn
  • Hamburger
  • 2 garlic cloves
  • Kosher salt

It was the perfect meal on a freezing day!

Simply combine all ingredients and place on the stove over medium heat until potatoes are soft (1.5 hours). Then, let soup simmer.

Yesterday, I grabbed the crockpot and made another Everything Left in the Fridge Soup.

This time I used:

  • Chicken broth
  • Potatoes
  • Green pepper
  • Chicken
  • Corn
  • Broccoli
  • Cherry tomatoes
  • Onions
  • Garlic cloves (minced)

This took a long time in the crockpot – even on high. The potatoes took a lot of time to get soft. If you do use your crockpot, start this early. Cut your potatoes into smaller pieces and give yourself 4 – 5 hours.
