I know many of you already make homemade mashed potatoes.
For some reason, it was not on my radar until I started analyzing where I could add real food (versus packaged) to our at-home menu.
Typically, I peel the potatoes and poke them with a fork, but I have finally convinced the kids that the red potato skins are tasty! I scrub them, cut them into smaller chunks, and cut off any rough spots.
Finally, after they have boiled and look soft and ready to be mashed, I’ll add some milk and butter. (It is fine to skip both.)
Sometimes, I add minced garlic while they are boiling, as well. Typically, I get fresh garlic, but I’ve been low on time, so I’ve been buying this jar of minced garlic in extra virgin olive oil (evoo).
This is always a big hit with the kids.
