This recipe was a Pinterest find (Texas Caviar) from several years ago, but I make some version of the recipe based on what we have in the cupboards.
Here’s what I used for this weekend’s Memorial Day version, and even though it changes a little each time, it’s always a favorite.
Ingredients:
- Purple onion (diced)
- Red, orange and yellow peppers (diced)
- Corn (drained)
- Black beans (drained)
- Tomatoes (diced)
- Avocado (diced)
- Himalayan Salt (to taste)
Mix it up and serve.
