Years ago, someone in Weight Watchers told me about an easy soup that was zero (or very low) in points for her point plan.
I don’t follow the original WW recipe, but this it’s very close to the version she shared.
When I was younger, I was always afraid to make a recipe if I didn’t have every single ingredient, but now, I just try it out with what we have and cross my fingers that it turns out to be something the whole family will eat.
Ingredients for Taco Soup:
- Chicken Broth (2 – 3 cups)
- Salsa (1/2 jar – use mild if kids are eating)
- Corn (1 can drained)
- Refried Beans (1 can)
- Black Beans (1 can drained and rinse)
- Kidney Beans (1 can drained and rinse)
- Taco Seasoning (1 packet – but I’ve made it frequently without this – including tonight)
- Chicken (Shred after cooking)
- Water (1/2 cup)
That’s it! Just throw it all together and cook on the stove on low for a couple of hours.
I’ve made it in the crockpot as well.
Tonight, we may have added sour cream and tortilla chips, but we were out of sour cream.
There’s a lot of great variations to this recipe.
