Years ago, someone in Weight Watchers told me about an easy soup that was zero (or very low) in points for her point plan.

I don’t follow the original WW recipe, but this it’s very close to the version she shared.

When I was younger, I was always afraid to make a recipe if I didn’t have every single ingredient, but now, I just try it out with what we have and cross my fingers that it turns out to be something the whole family will eat.

Ingredients for Taco Soup:

  • Chicken Broth (2 – 3 cups)
  • Salsa (1/2 jar – use mild if kids are eating)
  • Corn (1 can drained)
  • Refried Beans (1 can)
  • Black Beans (1 can drained and rinse)
  • Kidney Beans (1 can drained and rinse)
  • Taco Seasoning (1 packet – but I’ve made it frequently without this – including tonight)
  • Chicken (Shred after cooking)
  • Water (1/2 cup)

That’s it! Just throw it all together and cook on the stove on low for a couple of hours.

I’ve made it in the crockpot as well.

Tonight, we may have added sour cream and tortilla chips, but we were out of sour cream.

There’s a lot of great variations to this recipe.

  1. I have the WW recipe for this but I have always tweaked it according to my kids likings. I just sent it to two of my kids yesterday as they asked for it! Too funny that you posted this today. I always made mine in the crockpot after making it on the stove the first time. Seemed to taste better in the crockpot. We always put shredded cheese sprinkled on top along with those red and purple little shredded tortilla strips. Yum!

    1. Too funny! Yes, I forgot to add that we add shredded cheese – probably because the kids ate all of the groceries very rapidly this week. I did like it in the crockpot or when you have time to really let it simmer on the stove. 🙂 Thanks for the response!
