We had a bag of carrots that we were going to lose, so out came the crockpot for an awesome side dish. The kids love honey glazed carrots.

Always wash your produce.

Then, use a vegetable peeler to remove the outer layer.

Great tools are important, so if you’re looking for a great peeler – here’s one:

Normally, I would chop the carrots into fairly consistent, thin slices, but I was rushing. Throw the pieces into your crockpot.

As a wedding gift (2006), we received a Chicago Cutlery Set. We still use it daily. (Thank you, Aunt Susie & Uncle Joe)

Squeeze honey over the top of your carrots.

(Normally, we purchase local honey – due to its many health benefits, but we ran out and grabbed some from Meijer.)
Set your crockpot on low, and they will be ready in 4 – 6 hours.

Sometimes, I melt butter and honey in a bowl and pour it over the top. (They’ll be a little softer.)
Other times, I throw in a little butter (separately), but this is optional.
A sprinkle of cinnamon adds a little extra flavor, too.
Here’s a newer version of my crockpot:

Enjoy! It’s a great way to get the kids eating vegetables.
